CANNABIS CULINARY ARTS LAB

Published: August 5, 2026

CULINARY R&D FOR WELLNESS, CULTURE, AND COMMUNITY.

The Cannabis Culinary Arts Lab is not a dispensary. It is not a restaurant. It is not a cooking class.

It is a research and development facility — a purpose-built culinary lab where cannabis is treated as an ingredient with the same rigour, creativity, and institutional seriousness as any other culinary discipline.

A new field of culinary innovation. Built in Toronto. For the world.

THE FIVE DISCIPLINES

Added: August 5, 2026

01 — INFUSION

Precision cannabinoid infusion into oils, butters, broths, and base ingredients. The lab develops standardized infusion protocols that ensure consistent dosing, flavour integrity, and therapeutic efficacy across culinary applications.

02 — EXTRACTION

Full-spectrum and isolate extraction techniques applied to culinary contexts. The lab researches extraction methods that preserve terpene profiles, cannabinoid ratios, and flavour compounds — producing culinary-grade extracts that perform at the highest level.

03 — EDIBLE PRODUCTION

From concept to finished product, the lab develops edible formulations across confectionery, savoury, beverage, and functional food categories. Every product developed in the lab is documented, attributed, and archived through Cultural OS.

04 — TERPENE PAIRING

Terpenes are the aromatic and therapeutic compounds that define cannabis cultivar character. The lab applies sommelier-level terpene pairing methodology to culinary development — matching cultivar profiles to ingredients, flavour systems, and therapeutic intentions.

05 — MICRO-GREEN INTEGRATION

The micro-green production output of Evergreen OS feeds directly into the Cannabis Culinary Arts Lab. Micro-greens are integrated into edible formulations, plating systems, and nutritional profiles — closing the loop between the rooftop ecology and the culinary lab below.

THE INNOVATION PRINCIPLE

Added: August 5, 2026

Cannabis culinary arts is a new field. LOT T.O. is building its institutional foundation.

Not trend-chasing. Not novelty. Discipline. Research. Documentation. Transmission.

The lab produces knowledge as much as it produces food.

SYSTEM INTEGRATION

Added: August 5, 2026
